Warm, comforting and packed with wholesome vegetables, this easy vegetable soup is perfect for busy weeknights, relaxed weekends or whenever the family is craving something hearty and satisfying.
Made with Caribbean Dreams Vegetable Soup Mix, this recipe comes together quickly while still delivering plenty of rich, savoury flavour. Serve it with crackers, crusty bread or a few homemade dumplings for a complete and comforting meal.

Ingredients
1 pack Caribbean Dreams Vegetable Soup Mix
6 cups water
1 cup diced carrots
1 cup chopped tomatoes
1 cup sliced okra
1 cup diced Irish potatoes
½ cup chopped celery
½ cup chopped onions
½ cup diced bell peppers, optional
1 clove garlic, minced
½ teaspoon black pepper
1 teaspoon butter or coconut oil, optional
Fresh parsley, finely chopped, for garnish
Salt, if needed
Instructions
1. Prepare the Soup Base
In a medium-sized pot, bring the water to a boil.
Add the Caribbean Dreams Vegetable Soup Mix and stir well until it is completely dissolved.
2. Add the Vegetables
Reduce the heat to medium and add the carrots, tomatoes, okra, Irish potatoes, celery, onions and bell peppers, if using.
Stir to combine, then allow the soup to simmer for 15–20 minutes, or until the potatoes and carrots are tender.
3. Season and Simmer
Add the minced garlic, black pepper and half of the chopped parsley.
For a richer flavour, stir in the butter or coconut oil.
Allow the soup to simmer for another 5 minutes so the flavours can come together.
4. Taste and Serve
Taste the soup and adjust the seasoning with a little salt or additional black pepper, if needed.
Ladle into bowls, garnish with the remaining parsley and serve hot with crackers, crusty bread or your favourite side.
